I am trying to fill the interior of my shape with one solid color. However, when I change the fill to blue, it fills the shape outline, not the shape's interior (see images for reference). This might be a simple fix and any help would be greatly appreciated.

Looks like you have an open path. Use the Direct Select tool to box select the anchor points at the lower right where the "V" hits the rounded square. Then use the shortcut Cmd(Ctrl)-Opt(Alt)-J or menu Object>Path>Join to make a closed path which you should be able to fill with a solid color.

Is the shape outline still an actual stroke? as opposed to an expanded object where the stroke has been converted to a path?
If the former, just make sure you have the right square selcted (fill or stroke). Note: Even an open path will fill; it just assumes the two end points should be closed.
 
If the latter, it's an extra couple of steps since you will now have two shapes to deal with... the inside path and the outside path.
