Hi,
This is terribly frustrating, any help is appreciated. I updated my Illustrator app, and I'm unable to see how to create a new custom document. All I can see are ways to create from templates. Can someone help me?
I've tried File>New... Home>Create New...
No matter what I'm taken to a "New Document" prompt with all of these templates, and options to See Preview and Download them. I just want the classic New Document prompt where I can input my dimensions, select my units, resolution, etc... Please help, I'm losing my mind not being able to do basic work! Thank you!

Did you try Preferences > Use Legacy "File New" Interface?

Thank you Ton! That works... I don't see why Adobe would not want to offer that front and center anymore. Seems very counter-intuitive. In 2019 that legacy interface was just a part of the New Document prompt alongside the templates. That made sense.

I always use the legacy interface, much quicker to get to your presets.
