Why does Illustrator make it so hard just to change the default font?

Seriously do you people hate your users that much?

And why is the 'New Document' dialogue window so pathetic? Why doesn't it give you the ability to even edit or rename presents, Create preset groups for designated projects? Thank god we still have the legacy window, but wow. I feel like whichever product design team is behind this atrocity genuinely hates us.
