Color Overlay Issues

I'm creating jersey designs and currently having issues when trying to overlay the colors white or black. When I create an overlay and attempt to use white, the jersey turns gray instead. Any advice?

    Use the Quick Selection tool to create a mask.

    Add a Hue/Saturation layer Adjustment Layer, Saturation -100 Lightness 79 or more depending on surrounding area and desired whiteness while maintaining modeling. For Black move the slider to -100

    If you would like to control the modeling in a white shirt, consider changing the Mode to Lab color.

    After making the mask, in Curves zero out the  a. and  b channels as shown. The result will be the center image.

    Then adjust the Lightness channel as shown to control the modeling. Then return to RGB

    Overlay keeps the  grey colors, Screen keeps the highlight colors, and multiply keeps the shadow colors.

    So what would you suggest using in order to turn, say red to white?

    One way is with a hue/saturation adjustment layer.
