Why is it that when I try to change the size of a text box, it changes the size of the text. For example I drag one of the corners to make it larger it doesn't just make the box larger, it makes the text larger.  The text is squeezed to widened with the box?

Don't drag with the Move tool. Drag while using the Text tool.

Your text within the layer is being rendered as 'point text'.   You need to make the text 'paragraph text'.

Select and activate the layer that contains your text from the layers palette.

With the layer active, goto Type > Convert to Paragraph text. You should now be able to click into the text and see a bounding box that can be resized without resizing or rescaling the text inside. Type > Convert to Point Text to go back to normal.
