Text color will not change

I've used PS for years. Yesterday and today changing text color wouldn't work on several new projects. I tried the color picker, the foreground/background option, and the box in the character menu. I tried updating PS, I tried closing and relaunching. Nothing has worked so far. What would cause this to stop working? All files were opened as .pdf as in the past. If I open an old project that has text colors other than gray, I can change those text colors. What am I missing here? Help please !!
