Is this live text or rasterized (image)? If it's live text, you really should be doing this in InDesign. It will by default set text as K-only overprint. In Photoshop you'll have to do it manually, not to mention that Photoshop will rasterize the text quickly unless you're careful.

So what you do in Photoshop is paste into the K channel and fill C/M/Y with white to empty them. In your posted example, the K channel looks good to go as it is, so all you have to do is empty out the other channels.

If this was an RGB file, you'd copy the green channel (best contrast), convert to CMYK, and paste into the K channel. Empty the others as per above.

Emptying a channel means filling it with white. That translates to no ink on press.

1. Make sure the colour model is CMYK.

2. Set the colour to CMYK 0-0-0-100

3. Add the text.

There is no special magic needed.

Also DO NOT USE JPEG FOR TEXT. It is designed for photos (that what the P in JPEG means). It damages text.

@Test Screen Name That would work if you want a knock out with the black but the OP is asking for overprint which is not possible with a flattened jpg file.

Overprint? Well, you can fake it with a blend mode, I think, but I agree, Photoshop's the wrong tool for that.

Which color mode is it in? If, it's RGB you need to change it to CMYK. But that might not be wise, depending on how you intend printing it. For example, if you're printing to a desktop colour printer it's best to let the printer's software to do the conversion.
