Text suddenly too small

Text is no longer the correct size when using the text tool. Any ideas? Seemed to work okay before.

Text will be whatever size you set it to, and of course relative to your image dimensions. Text on a 100px canvas will look different than the same text settings on a 10,000px canvas.

What version of Photoshop are you using, also can you post a screenshot to highlight the issue

Your image is 6000 pixels tall at 72 pixels per inch, which is over 83 inches. 72 point type is just under one inch tall which is 1.2% of the image, so it looks as I would expect.

I would reccomend making a duplicate of your original, resized to your final dimensions, and then add the other layers. I'd also suggest setting Units and Rulers, in Edit > Preferences, to use Pixels instead of Points for type size.
