I am working on a project using multicam mode, and am trying to use adjustment layers to crop the videos. However, because the specific crop depends on the clip/camera angle, I'm thinking I need to go through and separate (maybe by moving to a new track) the clips so that only the clips with the same angle are on the same track. Then I'm thinking, in order to have the crop specific to that angle/track, I'd add adjustment layers to each, but this is where I'm wondering if there isn't a much better way to do it.
I'm somewhat of a beginner so apologies for my lack of vocabulary around this. Thank you in advance!

You can't really do it that way because each adjustment layer would affect all tracks below it. So, you'd have to make nested sequences of each track/camera and put the adjustment layer in each nested sequence.
How many shots are you talking about here? You could do the crop on each clip, just copy and paste it to the other clips that match and make individual adjustments to them.
