Captions - how to change the color of just 1 word in a caption

I create captions in prpro. 

I can change the font/size/color/placement of the entire captioning set, OR just one group of captions. However, I want to change just 1 word in a caption phrase. 

Example - the picture on the left has multiple colors (this is what I want to be able to do)
the one in the middle is my style for the whole set of captions

and the one on the right - I changed the fill JUST for that caption.

 

(note - the answer offered solves this - the trick is to make the change in the "program monitor" - in other words, the preview window of your video - that has the captions in it)
I can't figure out how to do this - is there a plugin for this or something?

In the Program Monitor, select the single word/phrase in the caption you want to style. Make the change in the Essential Graphics Panel.

 

Keep in mind that if you later apply a style to the whole caption, or to the caption track, it will overwrite all such changes.
