Export formats different across systems

I have been shooting 1080P on Canon DSLR and exporting H.264, using desktop iMac as well as MacBook pro, all on most recent OS. I migrated to a new iMac yesterday. My first export defaults to 3gp, which I have never chosen and is ugly and should be expunged from the universe. It does not appear that the version of Premeire Pro lets me choose output quality (available on the export screen on the MacBook) nor does it appear that ProRes export format is available for an archive-quality export. The new iMac downloaded a version of Premiere Pro yesterday (March 11). I want the ability to export H.264 at 75% quality or so for uploads, and ProRes at full quality for artchive. I am willing to pay for the storage, so 3gp is a waste of time. Why is this different across very similar systems?

Very unlikely!

I am sure the full range of Export Options are available and its nothing to do with PPro  version or even your new Mac.

When exporting as H.264, choose H.264 as the Format and not MPEG-4 or QuickTime options.

As for ProRes, not a Mac User, but I believe you must have QuickTime Pro installed perhaps to get ProRes export option? Or certain Mac software may include it as well.
