Hi,
I would like to make a project for my GF for Christmas. Combining picture slides as well as text slides. I do not necasarily want the text to just be on a blank black screen. Is there any easy to to spice it up, or like any templates?

In the Graphics workspace, using the Essential Graphics Panel controls, you can set the color of the text, add a stroke and/or a drop-shadow, and also add "background" around the text itself, specifying the color/tone and size of the background.
You can also create shapes "behind" text, and then give the shapes a color and tone.
Between the the above, there's quite a few ways to set off the text.

SirDisancti,
Check out the motion graphics templates that come in the Graphics panel. Click on Adobe Stock for added templates. The "free button" may help.
Thanks,
Kevin
