I have a static jpeg image. I want to enlarge the image (which i can do with scale and keyframes) but I would like the image animation to start slowly and then to get quicker as it gets to it's maximum size. I don't even know how to look this up - I don't know the technique's name. Thank you.

What you're looking for is called "Easing." You can right click the keyframe and change the easing from there.
You can further customize the amount of easing by twirling down the little arrow next to the property you're trying to ease. You can use the little bezier handles to change the graph and slow it down further.
