I have on open SSD to use for files and workspace etc. Is there a preferred disk format for such stuff?
MS-Dos FAT, etc?

If on Windows, NTFS. If on Mac, HFS+. If you need to go back and forth, ExFAT.
Avoid FAT32 and FAT16. The file size limitation and low character count limit make those two very poorly suited for video work.

Each of the Mac OS Extened options are variations of HFS+.
"Mac OS Extended (Journaled)" is a good choice.

by 'open ssd' I assume you mean a drive you plug into laptops or desktops as an external drive. Some pc some mac.
I would format the drives exfat ( like when you shoot the stuff and format those cards in the camera ).

processing, etc. i dont format stuff in camera.
i just take what it gives me.: sony.mov

yes, macOS extended. If I remember correctly, journaled is not required but can't hurt...
