I suggest you use layers. One for the black text and one for the coloured text. To be safe, supply to PDFs, one with the black text layer, and the second with the coloured text layer. PNG is definitely not the right format. A reliable PDF option is PDF/x-4 which is an ISO standard for print documents. This will not remedy a low res image. So if you have an image in your artwork that is 72ppi, it can't miraculously make it 300ppi, which is what you need for good quality print. This is my method (hopefully it works for you too): Draw a box with the rectangular grid tool. Keep your mouse in. Tap the up/down and left right keys to add/remove the number of grid units. Size does not matter at this point. Release your mouse. Use the transform panel to determine the exact with and height of your outer margins. e.g.: 210x297 less 10mm each side would be 190x277. Use the align functions to align to dartboard. Ungroup the object and select all the inner lines. Make their stroke width the size of the gap you want between each unit.
