In Illustrator 2017, if you have the Corner Widgets hidden, the corner controls do not appear in the Control Bar when you have a corner selected. I have always been able to keep the Corner Widgets hidden, but still round selected corners in the Control Bar until now. This problem first started happening in the 2017 prerelease for Mac. I reported it then when Adobe asked for feedback, and they did nothing about it since.

Ken, you have a fundamental misunderstanding of how Illustrator works. Grouping the layers will get you the closest to what you're after, but you will never be able to get rid of all the sublayers, because Illustrator is object-oriented, which means your graphics are composed of objects with a stacking order, i.e., layers. Just close the disclosure arrow that reveals the sublayers and you can pretend they're not even there if they bug you.

Monika is correct — just use Offset Path if you want to make the shape thinner. Incidentally, if you really want to turn this particular shape into a single path, it should take you about 30 seconds to make it from scratch. Take a circle, delete one of the four arcs, rotate 45°, flip and duplicate, connect two of the endpoints, and extend the others a bit.

Kurt, are you sure you can record an action that centers an object on the artboard? I've tried that before, and the action doesn't record the fact that I have the "Align to Artboard" option selected, so the action doesn't work.

He didn't have to "add anything new" since he already told you in post #1 what the problem is, and two other people concurred. To reiterate, you really should not be using the eraser tool for this basic task. Illustrator's unfortunately named Eraser tool is not like Photoshop's. You're not removing marks from the page, but carving grooves into shapes. It would be more appropriate to call it the Router tool. And he's right, by the way. If you don't understand the concept of selecting objects in Illustrator, you should really back up and learn the basics first. I can't think of a more basic concept than that.

Don't use the eraser tool at all. Illustrator is not Photoshop. Select the line you want to delete with one of the selection tools and hit the backspace key. Incidentally, though, the eraser leaves those marks because you're also erasing part of a large white rectangle (the border of the entire image?) that has a black stroke applied to it (what rcraighead said).

Move the black shape to the front, select the black and green shapes, and select Object > Clipping Mask > Make. The black will disappear, but you can direct-select it and replace the black fill. This is better than actually deleting everything outside the shape, because you can now move the grime around to reposition it if you need to.

Object > Path > Join is for joining the endpoints of one or two open paths. What you have here is a series of closed paths. You would get fewer gaps if you used Image Trace on ink lines instead of pencil lines since the darkness of the stroke would vary less.

‌In your defense, there's no reason Illustrator should happily accept a group of objects as a mask, and then display nothing as a result. It should at least give an error message explaining that your mask either needs to be a single path or a compound path. It would be even better if the error dialog would also have a button with the option to convert the group of objects to a compound path and then complete the mask. Hmm... I feel a feature request coming on...

Because your mask is not a compound path like it should be. Illustrator doesn't know which one of the 200 paths in your Grunge Streak is supposed to be the mask.

There is no need to create a copy of the mask shape in order to get the color back. Just direct select the mask after it is created and reapply the color.

You may be able to disable your Smart Line in Preferences>Smart Guides>Transform Tools. I have mine turned off and I do not see the Smart Line. This may not be correct and I will defer to any with more knowledge in this, but it seems to work for me.
Still doesn't fix this problem, though:
