I cannot find any way to link a OneDrive account to my Acrobat IOS apps (iPad and iPhone). Is this not possible?
I can link Acrobat on my Mac laptop to my OneDrive account.

Hi,
You may be missing the "Open-in" step.

Hi, Thanks for sharing this info. I also didn't know about this function. It's actually a little hidden. They should make this more obvious if you ask me.
One other question i have is, when you have let's say an excel file in the files app on your iPad (does not have to be onedrive). Then i don't need to slect open with, instead when i tap the excel file, it already knows it has to open the excel app. So this means the iPad linked the the .xlsx files to the excel app. It would be nice if the Adobe pdf app would do the same for .pdf extension. Or am i missing something?

It seems that this is a design behavior from Apple.
By default Viewer will always open or view files in iOS unless you perform the long press method to manually open such files with their native apps.
In AndroidOS it doesn't happen, for example.
In Android OS devices you don't have to do a long press everytime to select which app should open a PDF.
You can select Acrobat Reader as the default PDF app, and it will always open these type of documents in this app natively.
