Technically once a PDF document has been electronically signed AND SAVED there is no way to remove it unless you saved a copy first of the unsigned original document; it defies the purpose of the core JavaScript security mechanism for electronic and digital signatures.

But it would help if you describe in more detail how was this PDF signed.

However, if you were using the mobile app to apply an electronic signature with the Fill & Sign tool, I don't see why you can't delete it, edit or add another sigbature to the same document while you're still working on it and before it is saved.
