Hello. I have an iPhone with Adobe Acrobat Pro. I have tried editing documents on my phone, but I cannot edit or fill and sign. The document is listed with an error message as read only. How do I edit documents with my iPhone in the Adobe Acrobat Pro application?

Some of your terminology is confusing.
The iPhone does not support Acrobat Pro — you can only install Acrobat Reader for Mobile (free). If you have Adobe Acrobat Pro for desktop and have signed in with the same login, then it includes editing capabilities on the iPhone.
The exception is if the PDF is read-only. If the creator locked the file for editing then you cannot edit it without knowing the password and unlocking it.
There's a good chance I've misunderstood your question, so please clarify.

Hope you are doing well. Sorry for your experience with Acrobat Reader Mobile.
Files created read-only or protected from changes are only editable or fillable on the desktop version.
You might also try filling in the files on the online portal: https://acrobat.adobe.com/link/home/

Good afternoon, I am having the same issue. Unrestricted pdf, (confirmed it is not read only), and when opening on ipad it says read only. It works fine on adobe acrobat reader (free) on desktop.

Hope you are doing well and sorry for the late reply.
If you are still experiencing this issue, is this an issue with a particular PDF file or with all the PDFs? Please try with a different PDF file and check.
Also, as suggested in the previous response, files created read-only or protected from changes are only editable or fillable on the desktop version. You might also try filling in the files on the online portal: https://adobe.ly/4koVrf9 and see if that works.
