As an Adobe emloyee marked there answer as the correct in another post, when was it was clearly pointed out that their answer doesn't work, I have reacreated another post for everyone to vent their frustration at the AI assistant button in the new Acrobat.

.... and no, we don't want to change the UI back to the old one to remove it. We just want the setting in the options to turn it off to actualy work!

Thank you for your reply, as others have said this solution does not work for most people.
The AI solution provided by Adobe should be an opt-in solution not opt-out - when will Adobe understand that many companies will not permit software that has an AI component to operate - already I have colleagues using other PDF editing solutions to avoid AI - Adobe should not push this solution onto their customers without a robust process to remove the feature where it breaches company guidlines.

I agree with other peoples comments, suggesting we complete another feedback form on another page (that requires a seperate registration) is a waste of time, the 'feature' needs to be controlled by the user (your customer) and not controlled by your engineering team - there needs to be a way to turn this off completely and remove the bloat that it causes to the program.
