How to remove unwanted red or blue backgrounds or red field outlines in fillable text fields in PDF created in InDesign on a Mac, when shown on an iPad, whereas when viewed on a desktop computer these colours do not show.

The red or blue outlines on the boxes depend on how the form or the PDF was created. There are options where you can disable the outlines.

Many thanks for your reply. This only occurs when viewing on an iPad. No background colours or outlines appear when viewing on a desktop Mac. I now appreciate that the red background appears when checking the Required tickbox in PDF options in the Buttons and Forms panel, and the blue background when it's unchecked. But when tapping each field on iPad an ugly red or blue outline appears, on top of the background colour that is consistently there. I was hoping to make it more aesthetically pleasing. Would be some improvement if the colours only appeared when tapping on individual fields when entering text.

Fillable form fields are generally a pale blue by default. You can change the outline color of the fields on the desktop version of the application.
Please check the below images for reference:
By double-clicking on the form field, you get the properties box on Acrobat and then change the outline's color and fill color. However, this only comes into effect when the field is selected.
