E-sign/Echosign on Salesforce: Signing Order

Hi! We have Echosign installed on our Salesforce solution and can't seem to find the option to set the signing order of the approvers. We would want the approval to be sequential or parallel (any order), depending on the need. I've searched on it and found this article on Document Cloud Help however, I don't have the same screens on our Salesforce solution. Is there anything I need to do here? Will this need a package update or configuration somewhere? Attached a sample screen of Echosign on our Salesforce solution for reference.
