Image support is not available because the sony a7rv was launched just a month ago.
We request you allow us some time to add that to the list. We will update it in our community whenever the update comes.

If one is a creative cloud subscriber you can learn about their beta program here: https://helpx.adobe.com/x-productkb/global/creative-cloud-beta.html There is a beta version of Photoshop in there but I am not sure if that includes camera raw but anybody can download. Prerelease info is here but you generally have to be invited to get access: https://blog.developer.adobe.com/how-to-join-creative-cloud-prerelease-programs-ccecc10ae7d3

Picked up the new Sony a7R V on Wednesday and took a couple test shots and I can't open any of the RAW files in photoshop. Is there an update coming? Been shooting a7R III with no problems.

I don't see the a7R V listed (yet) so I would expect you'll have to wait for an updated Camera Raw release to use.

Adobe Camera Raw and Lightroom (Classic) are normally lagging camera releases. It's not always good to be at the forefront of the (Camera) progress. The DNG Converter does normally support new raw file formats in parallel with Lightroom/Adobe Camera Raw, as they are using the same engine to decode the file formats. A workaround would be to use the Sony converter to get a TIFF file.

Those that actually know cannot say.
Those that don't know and assume say a lot; ignore them. They are trolling and not able to answer the question.
Anyone with a (possible) beta of anything from Adobe is under NDA. They are not able to post an accurate answer.

Just received the NEW MODEL Sony A7R5 camera.
Trying to import some shots (ARW files) into LRC 12.0.1 with Camera Raw 15. on MacBook pro running Big Sur 11.6.8
They are not playing well.
Everything I see says it is suported and should be no problem. But, no go.
Any help is appreciated.

Yeah, I didn't realize there was a difference in the ARW files between camera models.

It is useful for everyone here to realize that many users ask about raw camera support outside not only this thread but outside this forum (like the Lightroom Classic, Photoshop, forums). Moderators attempt to clean up these posts and place them in older discussions like this one that has an official answer from Adobe along with correct answers to the question(s). When a question like "When is it expected that Camera Raw (for PS and LR) will be updated to include xxx" in other forums or posts, they posts get merged here, and the original poster should get notified of this. But that poster may not read through dozens of pages or even view the correct answers.

Camera released Oct 26th, LrC 12 released Oct 18th.
LrC update expected in a couple of weeks hopefully the Camera gets support then.
