How can I get transparant text with the black around it?

Just apply the right transparency to the text frame "Text"!

What is the English equivalent to "Produit"? I went through all of the transparency options and could not get it to knock out the black.

Note that the text in your example should not be transparent, but should be filled with [Paper] to knock out the black.

I have been thinking the same - but I'm on my phone so couldn't check.

If you want the word ROUND to allow the background to show through (like a doughnut), this would have to be a compound shape.

 

The text would need converted to outlines, a frame created, both selected: Object > Paths > Make Compound Path

I would probably use a paragraph rule to allow for adjustment of side offsets.
