So there is no tethering in the update for Sony A7III?

Unfortunately no.
A list of cameras that can be tethered to Lightroom Classic (adobe.com)
I suspect it may be too old since it was released in 2018. Tethering support starts for the A7IV released in 2021.

It looks like LR is relying on Sony's Camera Remote SDK (just as it relies on the Canon and Nikon SDKs), and the SDK only supports a limited number of cameras (scroll down to "Specifications"):

So maybe direct your feedback to Sony as well.

Unfortunately the update didn't help us with Sony A7iii, however I have been tethering using this tip from this video. It's a step by step to do it: https://youtu.be/gMDLoqrbJY8?si=BDacL5PCN_-cU2wq

It doesn't make sense. Lightroom has always supported older Canon cameras. Saying that Lightroom now supports Sony cameras but does not support the legendary A7III and A7RIII is ridiculous. Millions of A7III and A7RIII users are requesting that Adobe add these cameras for tethering capability.

It is Sony who did not include tethering of these cameras in the SDK. It was not Adobe's decision, they use what Sony provides. This was explained earlier in this thread by @John R Ellis
