Why is my PC crashing every time I use Premiere?

For the last month or so, I have had a persistent problem where my PC (Windows 11 Pro build 24H2) inexplicably shuts-down when using Adobe Premiere. I had the latest version of Premiere installed and thought that may be the problem so I rolled-back to 25.1.0 (build 73) but still get the same problem.
My PC specs are, 11th Gen Intel Core i9-11900 @ 2.50GHz 2.50 GHz, 64GB RAM (DDR4-2667 1333mhz), Gigabyte Z590 Vision G mobo (latest firmware), 650W PSU, AMD Radeon RX 480 Series GDDR5 2000mhz 8GB GPU (running latest AMD Adrenalin 24.9.1 software). Both my OS and Editing NVMe drives have plenty of space.
I went into Windows event Viewer but have no idea what detail I need to look at to try and understand why my PC is crashing.

Do you have any third party panels, or plugins installed?

What type of footage are you working with?

Do you receive a crash dialog box?

Latest drivers are good, sometimes might even need to rollback a driver. I don't run or install Nvidia software, only the drivers. Any on screen display software, like showing temps, frame-rates, curves, stuff... etc. Those kind of things really get in the way. My 25.1 and .2 so far have worked pretty well.
