Is there a way to set up video previews from old projects to be automatically deleted? Similar to how cache is automatically cleared after a certain amount of storage, I'm wondering if I could delete video previews based on either storage space or time.

You can post feature suggestions on the adobe Premiere forum.
But Allowing a program to automatically delete files could be dangerous. and Gotta say it's crucial that you manually monitor free drive space on a regular basis. Many programs can create cache files if you're not paying attention and people save files willy nilly to their desktop etc. You should keep at least 20% free space on your startup drive and at least 10% on other drives... (at least that's the accepted rule). I remember tech tool pro (a paid mac utility - not cheap) allowed you to set up automatic warnings. I imagine there are other alternatives... When I'm called in to troubleshoot a clients system, first thing I do is check available drive space...

Welcome to the community! Currently, there is no feature to automatically clean up the video previews. If you have completed your project & no longer need the preview files, you may manually remove them from the location specified under File > Project Settings > Scratch Disks. However, please proceed with caution, as the main directory may contain preview files from other projects. It's also a good practice to double-check that there are no other essential media or files in that location before removing anything.
