Select all the captions in your sequence, go to the Essential Graphics Panel and select the center align text icon.

What version of Premiere are you using? Can you provide more details in the steps you are taking or share a couple screen grabs if the project is not private?

I'm using the Creative Cloud Desktop. I transcribe, edit the text and then caption and it generates the dialogue. I then highlight the text in a box and under essental graphics I zone middle but it only does it for one. My friend told me to go to track style and type in a name after doing that so it does the whole dialogue. But I thought a few months ago there was an even easier way to do it with some shortcut key? Thanks for your inquiry. I'm totally new and am a work in progress.

To find the version of Premiere you are using, go to the Premiere menu at the top left corner of your montior and choose about Premiere Pro.
Where are you highlighting "the text in a box"? Is it the box of text in the Essential graphics panel, the caption window box or in the text in your program monitor?
If you look at my first reply to you above, I selected all the caption boxes in the entire caption track in your Timeline/Sequence. With them all selected, I then went into the Essential Graphics Panel and applied the centered align text or zone middle as you stated. This will then center all your captions at once.
Don't stress about being new. We all had to start somewhere and asking questions in this forum is the best way to get help when you are stuck. I hope these tips help you with your project and you enjoy using Premiere for your video projects.

I figured out through a friend a way to do it but I feel just a few months back there was a short cut.

The short cut way is what Andy showed you in his first screenshot. Drag select the whole row of caption segments (boxes) in the timeline. Then click on the center paragraph icon (that Andy showed). Or, if you are trying to change the Zone (the 9 boxes), click the zone you want.
You must have all the caption segments in the timeline selected.
It would help if you gave us screenshots of what you are seeing.
In Andy's screenshot of the Premiere Pro version, his shows 23.1.0 - that is the current version. Your number, 5.9.0.372 is not a PR version number.
