I have a project which has hundreds of clips on the timeline. Years ago when I started I made all the audio clips mono (because I was told that was the best to handle audio) but now I need to deliver all the clips in stereo.
I have added tons of filters on these clips to enchance the voice, remove background noise, etc.
My question is.. Is there any easy way to somehow select all the clips and turn them into stereo instead of mono while keeping the effects I applied?

I always go with an effect, fill left with righ or fill with right with left, so my mono tracks sound like stereo.

You wouldn't really be "turning mono clips stereo". Stereo clips have something different on the left and right channel, so if your clips are mono all you can do is export the audio as stereo. You would still get a mono result because you'd be outputting the same audio to both the left and right channel, but technically you'd have a stereo clip because you'd have both a left and right audio track. When you go to export your video, choose the audio tab and make sure stereo output is selected. Alternatively, you may want to change your sequence settings to stereo audio if it's currently set to mono.
