See my above comment for how to save the column display and order in the Project panel so you can always return to it.
You can use the Metadata Panel to view any metadata for clips in your timeline. To display the Metadata Panel, go to Window > Metadata. Here's more info about working with this panel: Metadata in Premiere Pro.
Regarding double-clicking to play the timeline, that might be a feature in another application. In Premiere Pro, I recommend using J-K-L for easy playback.

Hi Mike,
I'm not familiar with "edit mode" - can you tell me more about what you're trying to do and why you need to access scene numbers?
The column order in the Project panel will change if you rearrange, add, or remove columns.
To save the displayed fields in the Project or Metadata panel, click the panel context menu, choose Metadata Display, and select Save Settings.
To save the order of the columns in the Project panel, go to Window > Workspaces > Save Changes to Workspace or Save as New Workspace.
