I've got some interviews that I did a while ago, and had the audio recorded on its built in recording device, while video recorded separately. However, the audio recording gets split after 30 minutes, so if an interview lasted longer than 30 minutes, I'd have 2 audio files and 1 video file. Is there a way to merge/do multicam sequencing where 2 audio clips are synced with 1 video clip (separate times, I am not trying to sync multiple audio tracks, I know how to do that already)?

Yes, you can use Clip > Create Multi-cam Source Sequence to sync your video and audio tracks.
If your media shares the same timecode, set your Synchronize Point to Timecode and tick Create single multicam source sequence.
If you are syncing with audio, you'll need to make this adjustment manually:
1. Open the multi-camera source sequence in your timeline by right-clicking and choosing Open in Timeline. Move all your audio clips to the same track.
2. To get rid of the empty audio track, right-click the multi-camera source sequence in your Project panel and choose Clip > Modify > Audio Channels. Set Number of Audio Clips to 1.
