I think you've really got two options. You can work with the three documents as a Book, File > New > Book and keep the current documents separate. Or and this might take a bit of time initially. You could open all of the documents use Window > Arrange > Tile so you can see each one. Make sure you are on the Pages panel of one document, select ALL pages then drag and drop them into one of the documents. Then do the same thing with the third document. If you can Export to Artboards then you should be able to do everything with your current version. I would create a new file, make sure you tick artboards on the New file set up. Add as many artboards as you need, there should be an artboard tool available. which once selected will allow you to click plus buttons to create additional artboards. Place the images you want to use on different artboards, then use the Export to Artboards option. When I tested they came into the pdf backwards so you will need to either look at options carefully or place them in the right order to get the results you're after.
