You certainly can eliminate that space if you just resize the panel.

That is the Grid, useful for aligning vertical and horizontal objects. Command+' (apostrophe) toggles its visibility. You can set it up in Edit > Preferences > Guides, Grid, and Slices.
Note that tis is not the same as the Pixel Grid, which shows if you zoom in far enough.

You could use the Minimum filter, with a little Levels to clean up the whites. It does make lines thicker, so a small amount is called for. Using the Preserve Roundness option allows a finer adjustment.

You need to have the language installled on your system. I had some difficulty stitching some larger (for me) panoramas a couple of years ago, with both Photomerge and a third-party program, but I chalked it up to my old computer being underpowered. I ended up stitching smaller areas, and then stitching the results together.
I do not know the actual technical answer to your question, and I hope someone who does know can answer, as I am curious also.

What type of subject are they? Photomerge can have trouble aligning images of stars.

Are the various components to be scaled separately, and then combined? There is the Measurement Scale option in the Ruler tool.

I would try using Levels, to utilize the full range of brightness. I'd also add a Black and White layer, for the variations in color.

You can use the Ruler tool. First, measure the length to find how many pixels in one centimeter. If you have the Measurement Log window open, you can record this value.
Run Image > Image Size, with Resample unchecked, and Fit To set to Custom. In the Resolution field, enter the Pixels Per Centimeter found in the previous step, and save the image.

That's the beauty of Photoshop: many paths lead to the same goal. 😉

Which version of Photoshop are you running? Several people here have reported an, in my opinion, unduly alarming alert about not being supported, meaning no longer updated. However, as far as I know, if you dismiss the alert, you should be able to use Photoshop normally.

I don't see where a Gradient Map enters into this, but the filters in the Sketch section of the filter gallery, except for Water Paper, use the foreground and background colors to their effect.

I would use a Gradient Shape layer with an angle of 90°. Then, double-click on its thumbnail in the layers panel to bring up the Gradient Fill dialog. From there, click the bar that shows the Gradient, but NOT the drop-down arrow. This opens the "Real" gradient editor.
You can also open the "Real" editor from a Gradient Fill layer this way.

In the Layer Style dialog, if you click on the Gradient drop-down, you can access the various Gradients that ship with Photoshop, some colorful, some more pastel.
In the Style selector, in addition t the usual Linear, Radial, etc. there is also Shape Burst, which extends the gradient from the edge, in or out, depending on the Position setting
