Answer: Working with converted text requires Acrobat Reader. While you can open and preview your OCR'ed scan in Adobe Scan, you need to install Acrobat Reader and tap Open in Acrobat to work with the text.

Adobe Scan for iOS - there just HAS to be some form of User Guide somewhere - or am I just supposed to be clever enough to work out all of the functions by myself? I'm trying to use a number of the Adobe apps in a new initiative at our college to promote the iPad in the classroom, but I just don't have enough time to work out how each functions best on my own......
