I have the same mouse but use the wheel whilst holding alt and works fine, how did you have it set up?

I know it sound obvious but have you checked to see if any keys are stuck on the keyboard..? Are you able to try another keyboard? Have you tried a different mouse? Just so yo can rule that out as seems very strange behaviour.

Hi there, if you want a white background you need to add one. So, select the rectangle tool and have white fill then cover the artboard and send it to back.

Selecting off the stroke line SHOULD give you a single colour..? Sorry i miss read your first post, so selecting the stroke line give you the gradient and selcting off the line but still on the colour should select the colour..? 🤔

If you are selecting from a stroke make sure it's the stroke line you select from or it will just pick up the colour of where you are selecting...? See screenshot below...
