You can always load the Default Swatches and click the White Black gradient (which would be already there unless you deleted it).

Are you using a Large Canvas Document? What is the effective resolution of these images? Can you change the PDF settings to not downsample images?

Good catch! You probably need to modify something in the doc profile document and save it. Just adding and deleting a rectangle or like you did some text, delete it and save the file will do the trick. Don't forget to delete what you added, it can pop up later.

I just tried it, Export As... indeed reduces the resolution without telling (it changes the number of pixels but shows the resolution as 300 ppi), but Export for Screens seems to work.

That sound like you are working on a Large Canvas Document which has some limitations. When you create an artboard size larger than 227 inches (default canvas size) it becomes automatically a Large Canvas Document. https://helpx.adobe.com/illustrator/using/large-sized-artwork.html You cannot change that afterwards. Copy your artwork and paste it in to a new (smaller document).

It is the result of the GPU Preview. A 0pt line is not really visible. The CPU Preview (Ctrl E on Win) gives a slower but correct result. A screendump (or multiple stitched ones) is the only way to export the error.

But if you read the comments above, you will see that you need to complain to Apple who took that functionality away. The only solution is to save your Illustrator files with PDF compatibility for your clients that do not have any Adobe applications.
