New to this software and community. On the MAC I want to open files that have been favourited on my Apple photos. I don't seem to be able to do this. I can just open 'Music, Movies or Photos' but I can't seem to filter down any further. Is this correct?

If you mean you can open Music, Movies, or Photos in the sidebar in the standard File > Open dialog box, I think that’s as far as the Photos browser is supported in Photoshop. I have a couple other non-Adobe photo apps, and I tried it in those too to compare them to Photoshop. One offers a more detailed macOS Media Browser where you can filter, the other app offers the same limited Media Browser that Photoshop does. So it looks like it depends on the app.

The simplest way to do this might be in the other direction: Start from Apple Photos. Filter on Favorites there, select the images you want, then choose Image > Edit With > Adobe Photoshop to send them to Photoshop.
