when scrolling through fonts in after effects 2024 ver. 24.3.0 on my mac m3 pro Version 14.1 (23B2073)
the program will immedeatly crash when certian apple fonts are selected like apple braile. I have tried just deleting these fonts but it seems that there is just no option to. If anyone has also had this problem and found a workaround that would be very helpfull

This sounds very frustrating.
Are you getting the crash report dialog box? If so, be sure to provide as much detail as you can about what you were doing when the problem occurred, and then click "Send Report". What you indicated in your post here should be enough information.
I just tried Apple Braille, Apple Color Emoji, and Apple Symbols on a MacBook Pro M1 13-inch in After Effects 24.3.0 (Build 0) under macOS Sonoma 14.4.1 and I was able to select them as expected without a crash in After Effects; however, the glyphs for these fonts cannot be displayed in After Effects (I think Premiere Pro is supporting these fonts now).
If I need to use any of these Apple Fonts, I usually do so in a Text Object in an Adobe Illustrator document (sometimes using Create Outlines for the Apple fonts that support it like Apple Braille) or in a Text Layer in an Adobe Photoshop document and then import that into my After Effects project (usually as Composition).
As far as de-activating them goes, you could try to use macOS Font Book to reveal them in the Finder and move them out of /System/Library/Fonts/, but I'm guessing this would have to be done while booting in Safe Mode.
