I hired a graphics artist to do some work for me. She used After Effect and the Arial font.
How do I know this is an approved Adobe font and covered by their agreement?

Arial is a standard font on Windows machines. I'm pretty sure the same is true for Macs. I don't think you're going to have any problems.

Arial is by Monotype and you can review the licensing informaiton here:

Arial's EULA (end user license agreement) is like that of most typical desktop fonts that allow you to use it on your computer with authoring tools like After Effects.
For future reference, if it's an Adobe, you can check Font Licensing information here:
https://helpx.adobe.com/support/fonts.html
Under Troubleshooting & help, choose Font licensing.
If it's not an Adobe font, you'll have to check with the font publisher.

I assume you are alluding to fonts within the Adobe Font Creative Cloud app when you wrote "approved Adobe font". Within the Character Panel's Character Dropdown Menu, you can click on the Creative Cloud icon to filter display to only view Adobe Fonts. Once the list of fonts is filtered, as suggested, you can quickly check if a used font part of Adobe Font .
