An MP4 file doesn't have "More options". These are only relevant for Raw files and some other CoDecs and formats that may use specific functions, metadata or color profiles that require to e.g. define color ranges/ develop settings or CoDec specific color sampling settings. Whatever info you dug up probably is using exactly some such format. anything beyond that will require a better explanation. Your issues may be perfectly fixable using other methods, but of course without any idea about what your footage looks like and what teh problems are nobody can advise.

That's an MP4 file. MP4 does not support Alpha Channels or the other options. Check the info to the right of the preview thumbnail at the top of the Project panel. If you want to access the other options you have to have footage that supports it:

What are you trying to do to the footage. MP4's are always 8 bit RGB inter frame (IBP) with no alpha channel and at best some pretty severe color compression.  That is all the format offers. If you want professional options you need to shoot with a system that produces professional files. If the data you want to manipulate is not in the original footage you can't transcode it to a professional format and make the data magically appear.
