I have a few white fill layers in my composition, but it doesn't seem that these are being rendered out, or they're being rendered out as transparent. Please help, thanks!

Right click on the layer and make sure it is not checked as a guide layer

First thing would be what Roei said - guide layers. But another question is: Are you sure that your graphisc/layers have white background? Maby they're transparent. F. eg. if you have png file your default image browser in your system will show those graphics as they have white background even if they're transparent, but AE or Ps will show transparency - so check also that.

Hey everyone, thank you for your help. I appreciate the prompt responses on this forum, apologies for not following up sooner.
The guides were not the issue. Actually I am not quite sure what the issue was, but I solved my problem by creating a New > Solid layer, making it white and placing it as the bottom layer.
It is possible that in my noobness to After Effects I had not gone into the Composition settings and changed the background colour from black to white. It is set as white now, but that may be irrelevant since I also have the white solid layer on the bottom.
You can see the final video at the link below. It's not at all professional but, considering my low level of experience, I think it came out pretty well
