Sounds like your taking the correct steps.
Try creating a new artboard, copy/paste logo into new artboard, Save.
Export Again...options: File>Export As... or File>Save for Web (Legacy)

Yes, you can Save with Transparent Background in PNG format.
View>Show Transparency Grid

Here is another option to try:
(takes a bit of time to tweak but may like results)
After you convert your stroke to an outline.
1. Use the Knife Tool to split circle into 2 objects
2. Create 2 Gradients Left Side and Right Side – tip: create one and duplicate other. The Gradient Annotator will pop-up tweak angle, colors etc. Few Snapshots to illustrate.

Q: Change it back to what?
RGB is the default – RGB is a standard color model, displayed on your devices.
To change to other Color Mode, for example, CMYK, etc. you must 1. Image>Mode...select CMYK, etc. 2. Save your file 3. When you Open file it will no longer be in RGB mode.

First, determine the color mode. File>Document>Color Mode...RGB or CMYK
To get the rich black preview. Change your Preferences>Appearance of Black...Display All Blacks as Rich Black.
