I had the same issue with version 28.5 on Macbook Pro M2 Max  I rearranged the artboards and it seems it disappeared 80% I turned the Animated zoom off in the preferences settings for few seconds and turned back on that worked for me ... View more

I have done like this task before and here is my way to get the best result: 1- set the text alignment to center in the paragraph panel 2- Go to  Effect menu -> path -> outline object 3- in the preferences setting ( Genera Tab )  Turn on " Use preview bounds 4- use the align panel ( select the rectangle as the key object to keep it in the same position and avoid the movement )  to align the text to the container which the rounded rectangle in your case.    now, whenever you change the text it will remain perfectly aligned.   ... do you free you Ram and Disk cache on a regular basis ? Go to edit -> Purge -> all memeory and disk cache I create a keyboard shortcut for this command as I use it every few minutes I highly recommend to do so when you feel AE is slow.   one more note, if you really feel AE is slow, Conisder reset the preferences settings. ... it is not about checking your setting ,  I mean reset illustrator preferences settings: TO RESTORE PREFERENCES QUICKLY USING A KEYBOARD SHORTCUT Press and hold Alt+Control+Shift (Windows) or Option+Command+Shift (macOS) as you start Illustrator.
