For centered text, you can just center the text in the text panel.

To move the anchor point, press "y"-key and drag it.

This is very basic knowledge, you seem to miss. So please get in touch with the basic tutorials. AE is to complex to be self explaining.

You can go under the layer:transform menu and choose Center Anchor Point in Layer Content.
