Maybe someday Adobe will allow controls for all built in effects. In the meantime, can any suggest a plugin to replace Pixel Poly?

Pretty much any of the "big" third-party particle systems, meaning Trapcode Particular or Stardust has layer exploders/ layer emitters. Easy enough to fake the look with those. Otherwise exploding geometry into triangles/ quads is easy enough in 3D programs using deformers or modelling operations. It just takes more work than Pixel Polly.
