I didn't see you click on the align panel at all in the video you posted. All i saw was dragging the text around the center of the shape layer. I assume you were trying to get it to snap or something using a key-hold? Anyway clicking on the align icons in the align panel should align your object to the center of the comp because you have it set to Composition. You'd have to click both vertical and horizontal. If you switch the align panel to "selection" instead of comp then select both objects they will align the average between the two locations.
So you have several options.
If the align panel is set to composition: Make sure the shape layer is aligned to the center of the comp then align the text to the center of the comp.
If the align panel is set to selection: select both object align them to each other> parent the text to the shape, change the align setting back to comp and center the comp.
Also with an object selected you can use shortcut CTRL+Home to quickly align it to the center of the comp.
last option (i know of) is to activate "snapping" up at the top of the interface and drag the text till it snaps to the anchor point of the shape.

If you hold down "Ctrl" on windows, "Cmd" on mac, before left clicking and drag, it actually snaps to other layers, if you want them to snap to the center of each other, just hold ctrl/cmd and left click drag somewhere near the middle of the text, hover around the shape layer at the back, you should see your text snapping to it! Hope this helps!
