I'm working on a graphic where I want two images to collide and stretch/squeeze against each other, getting taller and thinner, before going back to normal. I couldn't figure out if there was a way to mess with dimensions on the timeline, though. Is there something I'm missing, or do I need to figure out a different solution?

That's what scale is for. You may want to find a good tutorial on basic squash & stretch animation.
