Hello, I'm curious if it's possible to use After Effects to animate anchor points of a mesh gradient made in Illustrator. Is it possible or do I have to remake it in After Effects?

Animate it? Not. Remake it? Possibly. Without exact info on your artwork we can't really advise. You have to show us a screenshot.

Looks just likje a bunch of blurred color spots to me. Esily doable with a number of simple shape layer circles and a heavy blur adjustment layer on top. The sharp edges on top can be easily created on top, just without the blur using strokes, shape layers with merge paths operatiors, intersecting (feathered) masks on solids and so on.

You can add more than one Gradient Fill to a shape layer and fiddle with blend modes and opacity.
