Intel vs Threadripper how many cores?

Do Adobe software like After effects and Premier pro use more than 8 cores? I know that no matter how many cores, the software will utilize all cores but I never heard that Adobe can use more than 8 cores! Dont they rely on the high clock speed?

https://www.pugetsystems.com/labs/articles/After-Effects-CC-2019-CPU-Roundup-Intel-vs-AMD-vs-Mac-129...

And here's the proof that After Effects does not use more than 8 cores.

But I want to make sure that I need to choose the right CPU.

1. Do all Adobe software including AE take advantage from more than 8 cores instead of high clock speed?

2. If so, any data or proof?

3. Which CPU do you recommend?
