Problem I'm having is I want to zoom out and have the object move at the same time, but it's going in a "S" path –– I just want it to go straight to the position. Here's a screen recording: https://www.screencast.com/t/nFuH35TW
I was able to fix it by changing the anchor point, but it ruins all the previous animation. Is there an alternative way to do this?

I'm not clear what you are having issues with, though it seems you just don't understand keyframing basics or for that matter how this stuff specifically in AE works. Perhaps an excursion to the online help or looking up a tutorial might be a good idea? also it might help to actually decouple the different transforms - animate position in a pre-comp, do the actual zoom/ faux scale in the parent comp.

Try selecting the keyfrmaes, right click and keyframe interpolation.
It looks like your temporal keframes are linear but you need to make sure your spatial keyframes are also linear.
